Dear Treyes, You said that you wanted the recipe for Puerto Rican Rice, well there are many to choose from. I am giving you the "Arros con Gandules" recipe ok. This is yellow rice with green pigoen peas. This also our national dish and it's something that is always present in the hollidays.

2 tablespoons annatto oil
1/4 cup sliced bacon or sausage
1/4 cup diced smoked ham
3/4 cup of Recaito
1 can (about 16 ounces) gandules (green pigeon peas)Goya cause they are better
2 cups tomato sauce
2 cups short-grain rice
4 to 41/2 cups water
salt and pepper to tast

Heat the oil in a big pot and a lid that fits. Add the bacon and ham and fry it so its slightly fried. Add the spices and the peas and the tomato sauce. After that cook on a meduim heat or so, untill the water is gone, if not it will be mushy. you can add the salt and stuff if you want. It takes about say, 45 minutes to cook. There are so many ways to do it. I am giving you the way my mother does it and it turnes out great.
I wish you luck. Let me know how it turns out for you ok. Take care y buen provecho. Bendicion

jeni,
Thanks for the receipe. It was GREAT!
My family really loved it. If you would like to share any others with me I would appreciate it! My husband is Puerto Rican, born and raised in Illinois. I am Italian. My husbands father was the only one here and made all the Puerto Rican Dishes. He's no longer with us and my husband has never met his family in Puerto Rico. However, I am surprising him with a trip to Puerto Rico in January 2000 to meet some of his family. It will be a great time.
Anyways, thanks again for the receipe!

Treyes, I am so happy that the recipie went well and everyone liked it. It was my pleasure to help you out. There are so many delicious foods we have and I am still learning how to cook these myself. My mom and aunt show me how. Also, me and my boyfriend bought books so that we can make the food that we love so much. Again, I am so happy to hear that it went so well. I bet your husband is going to love the surprise you have for him. Have a wonderful time in Puerto Rico! YOU ARE GOING TO LOVE IT!! here is a name of a cook book that is really good. It is called, A TASTE OF PUERTO RICO, By- YVONNE ORTIZ. Ther are so many yummy things in this one. Take care and God bless. Jennifer Garcia (jenigarcia@hotmail.com)
