Lechon Asado

Hi, so the method of original Lechon Asado has faded due to gov't regulations? So what about the flavors, has this been affected? I am looking to make Lechon Asado and have conducted many hrs of research on the subject. However, I've never tasted Lechon from PR. Do you cook Lechon? And, if so, what is your process?
