Hola a todos.

Como han estado? Espero que esten bien.

This has nothing to do with la politica, but I thought
it would be easier to catch at least one of you here then on
the 'recetas' forum. Please HELP!


Mire n, a dear dear PR friend is leaving to the east
coast in a couple of days and is coming to my house
for dinner this evening (guess who's coming to dinner).

As some of you know, I am not quite of the Borinquen
persuasion, therefore would not know any platos criollos.

I wanted to make just one Puerto Rican dish and thought of
arroz con gandules since I have a can in the cup board
and since I need to make rice tonight anyway. (I think very
economically as you can see.)

Please help with the quickest and easiest recipe you
know for arroz con gandules. I'd really appreciate it.

P.S. I kind of understand the concept of sofrito and
thought sundried tomatoes incorporated into the sofrito
base would work well, any thoughts on that?

Also, in the recipe I saw it said to submerge everything
in agua, but the So American way I learned to cook rice
says not to submerge in too much water all at once - o se pega - they add the water very slowly, like a half a cup at a time and let it get absorbed before the next amount of water is put in the pan.

OK, so you have a can of gandules, here goes the rest:

Sofrito is really a mixture of sweet peppers and other herbs. You can probably get by making a semi-SALSA CRUDA.

Take a tomato, dice it up finely,

a green pepper
(ditto),

some cilantro
(ditto),

half an onion
(ditto),

Half a slice of ham
(ditto).

Put everything in an osterizer blender and blend.

However much you get only use around three round tablespoons of it.

Now, take a kettle, pour olive oil
(they used to use lard in the old days) and heat it up to medium heat.

Then take the
"sofrito" you just made and stir fry it in for 2 minutes.

Then pour in your can of gandules.

Pour two cups of water.

Bring to boil the whole thing.

Pour in three cups of uncooked rice
(not the parboiled stuff, yuk...)[b]

Cover the kettle and simmer for 25 minutes, or until rice is dry and cooked.

There you have it, Arroz con Gandules .

Wink Gracias!

Hey gracias Jibaro!

I like the way you wrote the recipe, cuts right
to the chase and easy to follow!

No not really at too many rallies and so forth, I
work a lot in the inner city and still finishing up the MA degree.

I know a things like European, Mexican and So American
cooking-- (thanks to the suegra). People say the arroz
con pollo I cook is far more Mexican style. Picante!

Ok. Thanks. I'm going to cut and paste this incase I have
trouble getting online later!

Write to me and I will send you all the recipes I know. I can cook almost everything, Puerto Rican, Italian etc.... I guarantee the man will love it. Just don't feed him too much or he'll fall asleep. lol

How've you been? Hope all is well. I just
tried emailing you again for like the third time this
spring. I haven't gotten any replies yet so don't know
if things are just real busy for you on the home front as
I can imagine, or what has been going on.

Hopefully it's not a glitch w/this email prompt or my
email address or something.

Anyway I hope you're well.

Let me know.

p.s. yes the recipes sound great. i'd like a receta
for pr style arroz con pollo or any other fairly easy
dish for puerto rican food.
