Parilla, sous chef at Toro Salao, imparts the tastes of Spain into Caribbean plates. Server Carmen Delem talks about Parrot Club Restaurants blending of Puerto Rican fare with Cuban, Dominican, Peruvian, South American and Spanish cuisines. Delem whips up the restaurants famous mojito, a blend of mint leaves, sugar, rum, fresh-squeezed lime juice and a splash of club soda. At Restaurant 311, executive chef Christophe Gordain incorporates local ingredients like tropical fruits and root vegetables into his native French cuisine. Using French techniques, he's created lighter fare reminiscent of that served in the south of France.

The San Juan Gate in Old San Juan, Puerto Rico [00:55]
If you were a dignitary arriving from Spain in the 1500s through the 1800s, you would enter the city through this gate, called the San Juan Gate. Access to and from the city was tightly controlled through five gates. As the formal entrance, San Juan Gate meant protection and relief for weary travelers. Through its doors passed the documents, money, and people to carry out the Crown's will in this colony. The San Juan Gate is named after Saint John the Baptist. The Latin inscription above the gate reads :Benedictus qui venit in nomini Domini," meaning "Blessed are they who come in the name of the Lord." Each of the city's gates had similar inscriptions. An entrance to the city probably existed here in some form as early as the 1540s. The San Juan Gate as you see it today was built in 1635. It has been repaired and restored over the years and it is the last remaining of San Juan's principal gates.
