Parilla, sous chef at Toro Salao, imparts the tastes of Spain into Caribbean plates. Server Carmen Delem talks about Parrot Club Restaurants blending of Puerto Rican fare with Cuban, Dominican, Peruvian, South American and Spanish cuisines. Delem whips up the restaurants famous mojito, a blend of mint leaves, sugar, rum, fresh-squeezed lime juice and a splash of club soda. At Restaurant 311, executive chef Christophe Gordain incorporates local ingredients like tropical fruits and root vegetables into his native French cuisine. Using French techniques, he's created lighter fare reminiscent of that served in the south of France.

Drawing on the five elements of fire, wood, water, earth and metal, these signature treatments last 90 minutes and use distinct products that are customized based on each element to include a therapeutic bath, facial mask, scalp treatment, skin exfoliation and massage. Spa manager Partiti Simon recommends the Earth treatment which begins with a mud bath chock full of vitamins and minerals that leave the skin feeling silky and nourished.
